Ben’s Chilli Chorizo Pasta

“Here is another one of my infamous pasta recipes; Chilli Chorizo Pasta with Mushrooms and Sun-dried tomatoes”. – Ben

Chilli Chorizo Pasta Sauce

Chilli Chorizo Pasta Sauce with Mushrooms and Sun-dried Tomatoes

Ingredients:

  • Chorizo (2)
  • Pasta (preferably the tube kind)
  • Chilli (found a good masterfoods pureed fresh chilli jar)
  • 2 Tins of Peeled Tomatos (they come in a green can in the grocery store).
  • Sun dried tomatos (optional)
  • Mushrooms (optional)

Steps:

  1. Set a big pot to boil (for your pasta).
  2. Chop up your Chorizo (the smaller the more cost effective), chop up mushrooms/sun dried tomatoes if not precut.
  3. Fry up mushrooms, set aside.
  4. Fry up Chorizo with a bit of oil, add chilli/sun dried tomatoes, mushrooms.
  5. Put Pasta into boiling water.
  6. TASTE TEST > check if you need more Chilli or salt/pepper etc.
  7. Add tinned tomatoes to sauce goodness, and mush up the tomatoes with a spoon.
  8. Allow sauce to cook/boil, mush up any remaining tomato.
  9. Add Sauce to pasta and enjoy with some fresh Parmesan cheese.

Note: This pasta reheats REALLY WELL, unlike my other pasta recipe.
